One-tray Chilli, Chicken and Pumpkin Bake Recipe
A nourishing chicken dinner cannot be easier than our One Tray Bake. Make it in a beautiful casserole dish, so you can even put it on the dinner table straight from the oven.
Prep time: 15 minutes Cooking time: 30 minutes Serves: 4
- 4 Waitoa skinless and boneless chicken thighs
- 2-3 Red chillies
- A drizzle of Olivado Extra Virgin Olive Oil
- ½ Butternut pumpkin
- 6 cloves Garlic
We cooked and served this in a Le Creuset Signature Cast Iron Shallow Casserole
- Preheat oven to 190°C.
- Peel garlic gloves and smash with the side of a knife. Add a generous glug of oil to a large baking dish, then spread out chicken thighs and garlic. chop the butternut into large chunks and scatter around chicken. Slice the red chillies and scatter over chicken.Season tray well with salt and pepper. Add tray to oven, cook for 30 minutes or until chicken springs back and juices run clear when cut.
