Banana and pineapple loaf
This is a healthy loaf with the golden combination of bananas and pineapple.
Ingredients
- 1 ½ cups rice bran oil
- 3 cups flour
- 1 cup brown sugar
- 1 tsp baking powder
- 1 tsp baking soda
- ½ cup shredded coconut
- 1 ½ cups undrained crushed pineapple tinned
- 3 eggs
- 1 cup mashed ripe bananas
- 2 tsp vanilla extract
- 1 cup chopped almonds
Instructions
- Combine flour, brown sugar, baking powder and baking soda together.
- Beat eggs and add crushed pineapple, oil, vanilla extract and mashed bananas.
- Add to dry ingredients and combine with chopped almonds.
- Spread in two greased loaf trays.
- Bake at 175°C for 60 minutes or until toothpick inserted in centre comes out clean.
- Cool 15 minutes in pan then remove to rack to cool completely.
