Apricot Sultana Balls

Here’s something new, healthy and exciting for the lunchbox. Kids will enjoy them even more if they get to be involved and get their hands messy – so let them roll these apricot sultana balls in the coconut.

Serves: 20

Ingredients

150 g dried apricots
100 g sultanas
1 cup apple juice
8 Weet Bix
1/4 cup honey
Desicated coconut

Method

  1. Place apricots, sultanas and juice in a small saucepan and simmer until apricots have softened. Set aside to cool.
  2. Process Weet Bix in a food processor until finely crushed.
  3. Add the apricot mixture and the honey and process until combined.
  4. Roll mixture into small balls and roll in coconut.

Note: Any dried fruit can be use (try dates for adults), orange juice can be substituted for apple juice and nuts and seeds can be used alongside the coconut.
