Beef with Guinness and Chocolate
The dark, rich flavour and colour of Guinness can transform an inexpensive cut of casserole beef into a sexy feast! Add dark chocolate to complete the deal. So simple to make and irresistible comfort dinner. Enjoy!
Ingredients (serves 4):
500g casserole beef, cut into chunks
1 medium sized onion, sliced
1 can (440ml) Guinness
2 tablespoons Olivado olive oil
Salt & pepper
30g dark chocolate (we love Whittakers)
Cream or sour cream to serve
How to make Beef with Guinness and chocolate:
Slice onion thinly. Cut beef in 3-4 cm cubes and season generously with salt and freshly ground black pepper.
Heat olive oil in a sauce pan over medium heat. When hot add onion and stir fry until onion is soft and brown.
Add beef. Cook until the beef changes colour.
Add Guinness. Bring to boil. When it is just boiling skim the surface and reduce the heat to low. Simmer for 50-90 minutes until the beef is tender.
When the beef is done, turn the heat off and add the chocolate. Leave for it to melt for a few minutes and stir.
Serve with a teaspoonful of cream or sour cream accompanied by mashed potato and steamed vegetables.
