Blueberry Scones
Make some sweet blueberry scones. So delicious and so English! Complement this recipe with a nice cup of tea - and a lie down.
Ingredients
- 2 cups flour
- ⅓ cup sugar
- 2 tsp baking powder
- ⅛ tsp salt
- ⅓ cup butter cut into cubes
- 1 cup fresh blueberries or frozen
- 1 lemon zest only, optional
- 1 large egg lightly beaten
- 1 tsp vanilla extract
- ½ cup cream or milk
- Extra milk to brush on scones
Instructions
- Preheat oven to 230 °C.
- Combine flour, sugar, baking powder and salt into a bowl and mix well.
- Cut in the butter until mixture is crumbly.
- Add blueberries and lemon zest.
- In a seperate bowl, mix together cream, egg and vanilla and then add to the flour mixture.
- Stir ingredients just until moistened.
- Place dough to a lightly floured surface and roll dough out to 2–3 cm thick.
- Cut into triangles and place the scones on the baking sheet.
- Brush the tops of the scones with milk.
- Bake the scones until lightly browned on top, 15-20 minutes
