Blueberry Scones

Make some sweet blueberry scones. So delicious and so English! Complement this recipe with a nice cup of tea - and a lie down.

Ingredients
 
 

  • 2 cups flour
  • cup sugar
  • 2 tsp baking powder
  • tsp salt
  • cup butter cut into cubes
  • 1 cup fresh blueberries or frozen
  • 1 lemon zest only, optional
  • 1 large egg lightly beaten
  • 1 tsp vanilla extract
  • ½ cup cream or milk
  • Extra milk to brush on scones

Instructions
 

  • Preheat oven to 230 °C.
  • Combine flour, sugar, baking powder and salt into a bowl and mix well.
  • Cut in the butter until mixture is crumbly.
  • Add blueberries and lemon zest.
  • In a seperate bowl, mix together cream, egg and vanilla and then add to the flour mixture.
  • Stir ingredients just until moistened.
  • Place dough to a lightly floured surface and roll dough out to 2–3 cm thick.
  • Cut into triangles and place the scones on the baking sheet.
  • Brush the tops of the scones with milk.
  • Bake the scones until lightly browned on top, 15-20 minutes
