Breakfast potatoes
This one-pan brunch recipe is delicious and easy. Potatoes, mushrooms, Chorizo sausage and relish. What more could you ask for?
Ingredients
- 700 g baby potatoes
- 1 brown onion
- 1 red capsicum
- 1 clove of garlic finely chopped
- Fresh rosemary sprig
- 1 tsp fresh Thyme leaves
- 2 tsp paprika
- 2 tbsp olive oil
- 2 chorizo sausages cut into chunks
- 250 g mushrooms
- tomato relish to serve
- chopped fresh parsley to garnish
Instructions
- Preheat the oven to 220°C bake or 200°C fan bake.
- Cut the potatoes into small cubes, then dice onion and capsicum. Mix together.
- Add garlic, rosemary sprig, thyme, add chopped chorizo and the whole mushrooms.
- Toss together then spread over an oven tray and drizzle over the olive oil and sprinkle over the paprika.
- Place in the preheated oven for 30 minutes.
- Shake tray gently during cooking to get golden, crisp potatoes.
- Remove from the oven and garnish with chopped parsley.
- Serve with tomato relish on the side.
