Brioche French Toast with Bacon

Soft and sweet, delicious French toast recipe served with tasty bacon, fresh berries and maple syrup. Popular Cafe style breakfast at home.
Ingredients
- 4 Better Eggs size 8 eggs
- ½ tsp ground cinnamon
- 1 tsp vanilla essence
- ¼ tsp salt
- 1 cup milk
- 8 slices Brioche Gourmet sliced brioche
- Butter for frying
- 8 slices Farmland streaky bacon
To serve
- Maple syrup
- A selection of berries - strawberries hulled and halved, raspberries, blueberries
Instructions
- Whisk eggs, cinnamon, vanilla and salt in a shallow dish until fully combined. Whisk in milk.
- Immerse bread slice in the egg mixture one at a time, allowing it to absorb mixture for 5-10 seconds per side.
- To cook the French toast, melt 1 teaspoon of butter per slice over medium heat in a large skillet or on a griddle. Cook the soaked bread for 3-4 minutes each side, until golden and cooked through. Keep them warm in the oven on a low temperature until all the slices are done.
- In a separate pan, fry the bacon until crisp.
- Serve the French toast and bacon with fresh berries and a drizzle of maple syrup.
