Brioche French Toast with Bacon

  • A selection of berries - strawberries hulled and halved, raspberries, blueberries

Instructions
 

  • Whisk eggs, cinnamon, vanilla and salt in a shallow dish until fully combined. Whisk in milk.
  • Immerse bread slice in the egg mixture one at a time, allowing it to absorb mixture for 5-10 seconds per side.
  • To cook the French toast, melt 1 teaspoon of butter per slice over medium heat in a large skillet or on a griddle. Cook the soaked bread for 3-4 minutes each side, until golden and cooked through. Keep them warm in the oven on a low temperature until all the slices are done.
  • In a separate pan, fry the bacon until crisp.
  • Serve the French toast and bacon with fresh berries and a drizzle of maple syrup.
