Brioche Toasts with Smoked Salmon & Eggs

Enjoy this easy, but gorgeous café style breakfast made with gourmet ingredients at your weekend mornings.
Ingredients
- 8 Better Eggs size 8 eggs
- 2 tbsp butter
- salt & pepper
- 8 slices Brioche Gourmet sliced brioche
- 1 packet Aoraki Cold Smoked Salmon Slices 180g pack
- Superb Herb chives chopped, to garnish
Instructions
- Crack eggs into a bowl.
- Whisk eggs then season with a pinch of salt.
- Slowly melt butter in a nonstick frying pan over low heat.
- Pour in eggs, letting the outside set, then slowly stir with a rubber spatula until eggs are silky, smooth and creamy. Be careful not to overcook. Season to taste with salt & pepper.
- While the scrambled eggs are cooking, arrange the sliced brioche on an oven tray and toast until golden, then turn over to toast the other side.
- Butter the toast generously and place two pieces on each plate with a good spoonful of the scrambled eggs. Arrange some smoked salmon slices over the top of the eggs and snip some chives over each portion before serving.
