Chicken Fajitas

Sometimes it’s really hard to get kids interested in healthy meals. Meals that are ‘some assembly required’ are great options here. Kids love meals they ‘create’ themselves. As a bonus, these chicken Fajitas are also egg and nut free.

Serves: 4 (or 2 adults and 3 kids)

Ingredients

700 g chicken thighs sliced into strips
1½ tbsp vegetable oil
½ tsp cumin ground
1 tsp paprika ground
¼ tsp cinnamon ground
2 garlic cloves crushed or finely diced
1 400g can borlotti beans
1 cup cheddar cheese shredded
1 large onion sliced
1 large green capsicum sliced (red or yellow also fine – or use all three)
8-10 small tortillas
½ cup tomato salsa
½ cup natural yoghurt
1 cup guacamole (optional)

Method

  1. Place the chicken strips into a medium bowl.
  2. Mix the oil spices and garlic together then rub over strips.
  3. Put to one side and marinate for at least 30 minutes.
  4. Empty the can of beans and liquid into a small saucepan that has a lid.
  5. Mash with a fork to combine liquid and beans then bring to the boil.
  6. Once boiled remove from heat sprinkle cheese on top cover and leave in the saucepan to melt until serving.
  7. Heat a large heavy based frying pan until very hot.
  8. Add capsicum and onion to chicken strips then season with salt and pepper
  9. Cook until chicken is browned and cooked through. (note: you will have to cook in two batches).
  10. When done, remove to a lidded serving dish. Repeat process with remaining meat onion and capsicum.
  11. To serve place chicken, beans, salsa, yoghurt, and guacamole in the middle of the table.
  12. Keep the warmed tortillas covered in a clean tea towel.
  13. Fill with ingredients and enjoy.
