Citrus Sorbet

Winter means loads of delicious, juicy citrus. This sorbet recipe is a wonderful way to use up all the excess citrus fruit and will help provide valuable vitamin C. The ginger makes a lovely addition.

Serves 6-8

To make Citrus Sorbet, you will need:

3 cups water

1/2 cup sugar

4 tablespoons finely chopped peeled fresh ginger

3 teaspoons finely grated lemon peel

3 teaspoons finely grated lime peel

4 tablespoons fresh lemon juice

4 tablespoons fresh lime juice

How to make Sorbet:

Combine 3 cups water, sugar and ginger in heavy large saucepan. Bring to boil, stirring until sugar dissolves. Reduce heat and simmer 10 minutes. Strain liquid into large bowl, discard solids.

Return liquid to same saucepan. Add lemon and lime peels. Boil 2 minutes. Remove from heat. Whisk in lemon and lime juices. Cool completely. Pour mixture into glass baking dish. Cover and freeze until solid, about 6 hours or overnight.

Transfer mixture to processor and puree until smooth. Return to same glass dish; cover and freeze until solid, at least 3 hours or overnight.

This sorbet recipe can be prepared at least three days ahead. Scoop sorbet into glasses or bowls and garnish with slices of fresh citrus and mint. Serve with a dessert wine.
