Creamy Tomato & Bacon Fettuccine

There’s nothing like a simple pasta dish for a quick weeknight meal. This smokey bacon fettuccine has the veggies built in so you don’t need to cook anything extra!

Ingredients
 
 

  • 300 g Diamond fettuccine pasta
  • 2 tbsp olive oil
  • 250 g Farmland streaky bacon chopped
  • 2 cloves garlic crushed
  • 1 tsp smoked paprika
  • 1 tin chopped tomatoes in juice 400g
  • salt and pepper to taste
  • 1 cup frozen peas
  • 2 tbsp sour cream
  • grated parmesan cheese

Instructions
 

  • Bring a large pot of salted water to the boil and cook the fettuccine according to the packet instructions.
  • While the fettuccine is cooking, heat the oil in a large fry pan and cook the bacon until crispy. Add the garlic and cook for 1-2 minutes until the garlic is fragrant. Add the paprika and cook for a few more seconds, then add the tinned tomatoes, season to taste with salt and pepper, and bring to a simmer.
  • Once the sauce is at a simmer, add the frozen peas and cook for 4 minutes or until tender. Stir in the sour cream and cooked fettuccine and serve with some fresh parmesan grated over the top.

Notes

TIP: If the sauce seems too thick add a little pasta water to bring to the desired consistency.
