Crispy Air Fryer Mushrooms

Crunchy on the outside and juicy on the inside, these mushrooms are perfect as a side dish for a brunch or for dipping into your favourite sauce.
Ingredients
- 3 Better Eggs size 7
- 1 box Diamond Coat ‘n Cook Original
- 2 punnets Meadow Mushrooms white button mushrooms 400g packs
- Dot’s Cooking Oil Spray for cooking
- parsley to garnish
- Aioli or garlic mayonnaise to serve with
- Lemon wedges to serve with
Instructions
- Preheat the air fryer to 200C.
- Beat the eggs in a bowl. Tip the Diamond Coat ‘n Cook Original into another small deep bowl.
- Dip mushrooms in beaten eggs, then into the Coat ‘n Cook. Coat all the mushrooms this way and put on a plate.Spray with oil.
- Place a batch of mushrooms in the air fryer basket without touching each other. Cook for 6 minutes. Shake the basket and spray any dry looking patches with cooking spray. Cook for a further 6 minutes. Repeat with the remaining mushrooms.
- Serve hot with lemon wedges and aioli.
