Bananas Foster

Bananas Foster is a slice made using bananas and dark rum. This recipe uses a cream cheese icing. Created in 1951, it was named for Richard Foster, former New Orleans Crime Commission chairman.

Ingredients

Slice
1/2 cup butter, softened
1 cup dark brown sugar, firmly packed
1 egg
1 tbsp dark rum or 1 tsp rum extract
1 cup flour
1/8 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1 cup bananas, diced
1/2 cup walnuts, chopped

Icing
2 tbsp unsalted butter, (room temperature)
115 g cream cheese, softened
1/4 cup brown sugar, packed
1 tsp rum or pure vanilla extract
1 tsp cinnamon
1 to 2 cups icing sugar, sifted
Walnut halves for garnish

Method

To make the Slice
Preheat oven to 180?C.
Grease and flour 20 cm baking tin.

In large bowl, beat together butter and sugar until creamy. Add egg and rum mixing to combine.

In smaller bowl, sift flour, baking soda, baking powder, cinnamon, and salt.
Gradually add to butter mixture.
Add bananas and walnuts and gently stir to combine.

Transfer batter into baking tin and spread evenly.
Bake for 20 to 25 minutes or until cake skewer comes out clean. Remove to a wire rack and cool completely in the tin so that it sets.

To make the Icing
Combine butter, cream cheese, sugar, and rum and beat well until light and fluffy.
Add cinnamon and 1 cup icing sugar blending until smooth.* Add additional icing sugar until you create desired consistency.

Spread icing over cooled slice, sprinkle with chopped walnuts and place in fridge to set and cut into squares to serve. Will last in the fridge for up to 3 days

*over mixing may cause separation so go easy
