Chocolate, Banana & Coconut Crepes

This chocolate, banana and coconut crepe recipe makes for an absolutley delicious and light dessert that no one can say no to!

What You Need:

Batter

2 1/2 c Milk
4 Eggs
2 Tbsp Butter (melted)
2 c Flour
Pinch of Salt
1 ½ Tsp Vanilla Essence
Vegetable Oil (for pan)

Chocolate, Banana and Coconut Filing

Crepes
Cooking Chocolate
I c Cream
3 – 4 Bananas
1/3 c Shredded Coconut
Vanilla Ice Cream

Method:

Batter

In a bowl, beat eggs until smooth. Add milk and butter and mix well.
Sift together flour and salt into a separate mixing bowl.
Add egg mixture to flour and salt and stir batter until small bubbles form on the surface.
Grease the pan with vegetable oil and heat on stove element.
Once pan is hot, pour 2 – 3 Tbsp of the batter mixture and quickly move pan around so that the batter is spread evenly into a thin layer.
Cook for about 1 minute and then flip with a spatula to cook the other side for 30 seconds.
Repeat these steps until batter is finished.

Filing

Melt cooking chocolate in a bowl over a pot of simmering water.
Add cream to the chocolate and stir until well combined, then remove from heat.
Place crepes on individual plates and line one half of each crepe with chocolate and small slices of banana.
Fold empty half of crepe over and then pour more chocolate on top and sprinkle with coconut.
Add a scoop of vanilla ice cream and serve.
