Easy Omelette

This healthy and easy omelette recipe is gluten free and full of all the antioxidants you'll need for a busy day ahead.

Ingredients
 
 

  • 4 eggs
  • 1 tbsp water or a dash of cream for a softer omelette
  • 1 courgette grated
  • 1 Handful of fresh chives chopped
  • rock salt
  • Black Pepper
  • 1 Handful of fresh baby spinach or chopped silver beet.
  • 1 Small knob of butter
  • 100 g Smoked Salmon
  • Fresh salad greens to serve

Instructions
 

  • Beat the eggs in a bowl with the water (or cream), mix in courgette and chives and season with the salt and pepper.
  • Melt the butter in your frying pan. When bubbling golden, add half the egg mixture and cook for 90 seconds, until the egg is beginning to set in places. Scatter evenly with half the baby spinach leaves and with half of the salmon slices. Cook for a further 1-2 minutes, until the egg is golden underneath, and just set on top. Slide out onto a serving plate, folding it over as you go.
  • Repeat the above step to make the second omelette.
  • Scatter a few chopped chives over each omelette and serve with a crisp, green salad.
