Falafel Patties with Peanut and Dukkha Mayo

Falafels are gorgeous little fritters of goodness and are made out of chickpeas (also called garbanzo beans). The chickpeas are soaked, then ground up, and seasoned with onion and spices like parsley, garlic, cumin and coriander. You’ll love these falafels with a beautiful Best Food mayo twist.

Ingredients ( Serves 4 )

2 cups falafel mix

2 tablespoons dukkha

Olive oil for frying

1 red onion

¼ cup apple cider vinegar

2 teaspoons caster sugar

2 roasted red capsicums, sliced

1 cup baby kale or spinach leaves

½ cup Best Foods Mayonnaise

1 tablespoon peanut butter

½ teaspoon turmeric

Fresh basil

4 seeded wholemeal buns

 

Method

  1. Shape the falafel mixture into 4 even sized patties and sprinkle with 1 tablespoon of the dukkha.
  2. Heat the oil and gently fry for 2-3minutes each side until golden and cooked through.
  3. Slice the red onion finely and marinate in the cider vinegar and sugar for at least 10 minutes until bright pink and tender.
  4. Combine the mayonnaise, peanut butter, turmeric and remaining dukkha and season well.
  5. Spilt and warm the seeded buns then layer with a generous spread of the flavoured mayo, kale, falafel patties and top with the roasted capsicum, fresh basil and pickled pink onions.
