Fast Egg Pasta Primavera

Add this perfect pasta to your family meal repertoire. This pasta is quick, tasty and everyone will love it!

Serves 4

You will need:

400g spiral pasta
1 cup your favourite chunky basil pesto
4 eggs, beaten
2 tsp finely grated lemon rind
50g baby English spinach leaves
1/4 cup grated Parmesan

How to make Fast Egg Pasta Primavera:

Cook the pasta in a large pan of boiling water until tender.

Drain the pasta and return to the pan. Add the pesto, combined eggs and lemon rind, and stir so the hot pasta cooks the eggs. Add the spinach leaves, toss to combine to wilt the spinach.

Serve in shallow pasta bowls, sprinkled with Parmesan, chilli flakes and freshly ground black pepper.

Tips:
– Serve with freshly steamed minted peas and broccolini as green goodness sides.

– Make more of a main meal with this pasta dish by adding cooked chicken. Delicious!
