Festive avocado dip
This dreamily creamy green avocado dip is the perfect addition to any festive spread. Savour it alone or use it as a base, topped with smoked salmon or cured meats, accompanied by quality crackers.
Ingredients
- 2 ripe NZ avocados peeled, pitted and scooped
- ½ cup plain Greek yoghurt
- 2 tbsp freshly squeezed lemon juice
- 1 garlic clove minced
- ¼ tsp sea salt
- 2 tbsp FreshLife hazelnuts
- 1 tbsp FreshLife pine nuts lightly toasted
- 1 tbsp pomegranate seeds
- Italian parsley
- Huntley & Palmers Baked sourdough Himalayan Sea Salt crackers To serve
Instructions
- In a food processor, combine the avocado flesh, yoghurt, lemon juice, garlic, and salt. Pulse until smooth.
- Spoon into a bowl and dress the top with a scatter of nuts, pomegranate seeds, and some fresh parsley.
