Flourless Chocolate Walnut Slice

This fudgy, rich chocolate brownie is studded with deliciously crunchy chunks of walnut. It’s gluten-free so if you, or anyone you’re baking for, can’t tolerate gluten, then you can give them a gorgeous treat with this one.
Ingredients
- 150 g dark chocolate
- 90 g unsalted butter
- Pinch of salt
- 140 g brown sugar
- 1 tsp vanilla essence
- 2 Better Eggs size 7 eggs
- 70 g FreshLife ground almonds
- 60 g FreshLife rice flour
- 75 g FreshLife walnuts reserve some for topping
Instructions
- Preheat the oven to 190°C. Grease and line a 20cm square baking tin with baking paper.
- Melt the butter and chocolate together in the microwave, stirring at intervals until smooth. Let cool for 5 minutes.
- Add the sugar, eggs, and vanilla, mixing until smooth and well combined.
- Fold in the rice flour, ground almonds and two-thirds of the walnuts until just combined.
- Pour the batter into the prepared tin and smooth the top.
- Sprinkle the remaining walnuts over the top.
- Bake at 180°C for 25 minutes.
- Let cool in the tin for 20–25 minutes, then transfer to a wire rack to cool completely.
- Once cooled, cut into 9 slices and enjoy!
