French Toast with Bacon and Maple Syrup

French Toast with Bacon and Maple Syrup

Let golden French Toast soak up the maple syrup and enjoy it with salty, crispy bacon. French Toast is the perfect breakfast in bed treat for someone extra special.

Serves 2 Prep Time 15 minutes Cook Time 20 Minutes

3 eggs
160ml (2/3 cup) milk (we love Lewis Road Creamery)
3 tsp caster sugar
Olivado Liquid Coconut Oil
4 thick slices white bread (brioche, sourdough or standard white will do!)
4 cooked streaky bacon rashers (we love Hellers)
Maple syrup, to serve
Suggested toppings: fresh mint, grilled banana and toasted coconut

Lightly whisk eggs in a bowl. Add milk and sugar, and stir to combine.
Warm coconut oil in a large frying pan over medium-high heat. Dip bread in the egg mixture. Cook for 1-2 minutes each side or until golden.
Put the french toast slices on serving plates and top with crisp bacon, grilled banana if desired and a sprig of mint. Serve with maple syrup.
For that extra special brunch, served with toasted coconut. Or even a glass of champagne. Even serve up with some oven baked truss tomatoes for colour and health.
