Great Guacamole


This classic guacamole is the same texture and consistency as salsa. It’s an exceptional side dish to any Mexican meal, or serve as an appetiser with corn chips. Guacamole is a great way to enjoy chips and dip without guilt and you can swap and add ingredients to suit you – so get whizzing!

Prep Time: 10 Minutes Serves: 10

Ingredients

2 ripe avocados, halved, seeded, peeled and diced
4 medium tomatoes, peeled and chopped
2 garlic cloves
1/4 medium onion, chopped
1 green or red chilli (or red capsicum if you’re not a fan of chilli)
3 tablespoons coriander or parsley, chopped
1 1/2 teaspoons coarse salt
Sprinkle of cayenne pepper or chilli powder
Juice of 1/2 fresh lime

Method

  1. Process tomatoes, onion, garlic, and chilli (or capsicum) in a food processor for about eight seconds.
  2. Add avocado chunks, coriander, salt, chilli powder and lime juice to the food processor bowl. Process for an additional ten seconds. Texture should be chunky like a salsa.
  3. Taste and adjust heat by adding more cayenne pepper/chillli powder. Refrigerate until served.

The lime or lemon juice will keep your gorgeous guacamole from turning brown.

Note: you can use a mortar and pestle instead of a food processor for a chunkier textured dip.
