Greek salad
If you want a salad that is as flavoursome as it is nutritious, you can't go past this Greek Salad. This dish is healthy and delicious.

  • 2 telegraph cucumbers sliced
  • 1 punnet cherry tomatoes halved
  • 1 medium red onion sliced
  • 1 ⅓ cups fresh parsley coarsely chopped
  • 1 ⅓ cups kalamata olives drained pitted, halved if large
  • ½ cup extra virgin olive oil
  • ½ cup lemon juice
  • 1 ½ tsp dried oregano
  • 1 packet feta cheese
  • Salt and fresh-ground pepper


  • In a large bowl, combine cucumbers, tomatoes, onion, parsley, and olives.
  • In a small bowl, mix olive oil, lemon juice, and oregano.
  • Break feta cheese into about 1cm chunks and add to your cucumber mixture. Add your Greek Salad dressing and mix gently, adding salt and pepper to taste.
  • Serve atop freshly washed salad leaves, preferably Green Fancy or Cos, or any leafy greens you have in your garden.
