Hot cross Easter muffins
Easter treats come in all shapes and flavours. These hot cross Easter muffins are yumny & especially good for a healthy kids Easter treasure hunt.
Ingredients
- ⅓ cup butter
- 1 cup milk
- 1 cup sultanas
- 3 cups flour
- ½ cup bran flakes
- ½ cup brown sugar
- 1 tbsp baking powder
- 2 tsp mixed spice
- ½ cup mixed peel optional
- 1 tsp baking soda
- 1 lightly beaten egg
Instructions
- Preheat oven to 200 °C.
- Grease 12 deep muffin tins.
- In a small pot, heat the butter, milk and sultanas, stirring until the butter is melted. Set aside too cool.
- In a large bowl, combine all the dry ingredients except baking soda.
- Stir the baking soda into the cooled milk/butter mixture.
- Add the milk mixture and egg to the dry ingredients and mix until just combined.
- Spoon into the muffin tins.
- Bake for about 20 –25 min until golden brown.
- Leave in the tins for 5 min before cooling on a rack.
- When cool, don't be afraid to go overboard with themed icing and decorations. Think - crosses, little lolly eggs, baby bunnies and anything cute-as-pie.
