Japanese style fried chicken

This fried chicken is perfect for a weekend rugby game! Chicken Karaage is great with beer, even when cold. Kids love these chicken pieces too.

Ingredients

2-3 chicken thighs –boneless skinless cut into bite size pieces

Marinade:
2 tablespoons soy sauce
1 tablespoon sake ( or dry white wine )
1 teaspoon grated ginger
1 small clove of garlic grated (optional)
Corn flour
Oil for deep frying

Method

  1. Mix ingredients for marinade.
  2. Marinade chicken pieces for 20 -30 minutes. Don’t leave too long or meat becomes tough.
  3. Put about a quarter cup of corn flour in a clean dry plastic bag. Pat dry chicken pieces with paper towel.
  4. Put chicken pieces in the plastic bag and shake the bag to coat chicken pieces with corn flour evenly.
  5. Deep fry the chicken in hot oil (180C) for 4-5 minutes until they are cooked and turn golden brown.
