Kimchi Udon Bowl

A bowl of noodles with a fried egg on top with a pair of chopsticks.
Some days, all you need is a bowl of delicious spicy noodles.

Ingredients
 
 

  • 1 tbsp cooking oil
  • 4 rashers Farmland Streaky Bacon
  • 1 cup kimchi roughly chopped
  • ½ onion sliced lengthwise
  • 400 g Trident Udon Noodles
  • 4 stalks Spring onions thinly sliced
  • For the sauce
  • 1 tbsp gochugaru Korean chilli flakes
  • ½ tbsp gochujang Korean chilli paste
  • 1 tbsp premium soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 2 cloves garlic minced

Garnish

  • 2 eggs fried
  • Spring onions sliced
  • A pinch of gachugaru

Instructions
 

  • Mix sauce ingredients and set aside.
  • Cut bacon in 1cm thick slices.
  • Heat oil in a large frying pan on medium-high heat and fry the bacon for 2-3 minutes. Add the kimchi and onion and cook for 2 minutes.
  • Add noodles, Spring onions and sauce. Fry for 2 minutes.
  • Split the noodles in 2 bowls, top with a fried egg sprinkle with chilli flakes and garnish with extra Spring onions. Enjoy!
