Rocky Road Slice

We love this Rocky Road recipe - its super easy and super delicious

Ingredients
 
 

  • 250 g plain sweet biscuits crushed finely
  • 200 g butter melted
  • 125 g mixed marshmallows chopped
  • ½ cup red glace cherries halved
  • ? cup desiccated coconut
  • ? cup crushed nuts whichever nuts you prefer, we love pistachios
  • 500 g milk chocolate chopped and melted

Instructions
 

  • Grease 18cm x 28cm slice pan; line base and two long sides with baking paper
  • Combine biscuit crumbs and better in a large blow, press mixture firmly into pan using a fork.
  • Refrigerate for 20 minutes, or until firm
  • Combine marshmallows, cherries, coconut and nuts in a large bowl; stir in melted chocolate.  Spoon evenly over base; refrigerate for one hour until firm
  • Before serving, cut into squares with a hot knife

Notes

Tip: crush biscuits in a food processor.  You can melt chocolate in a microwave-safe bowl on high for 30 second bursts, stirring after each.
