Make Mum some Nougat

If you’ve long outgrown making paper hearts and macaroni portraits of your Mum for Mother’s Day, and your adult self needs to find a way to make your Mum feel extra special – we’ve got you covered.

Whipping her up one of these gloriously indulgent recipes will help keep your Mum happy, and ensure there’s no end to the home-cooked meals and baking that never taste quite the same when you cook them in your own kitchen.

Baileys Nougat Parfait with Mango Salsa

Ingredients for 6 people:

Nougat parfait:

  • 30g dark chocolate
  • 200g nut nougat (sliceable)
  • 125ml Baileys Irish Cream
  • 250ml whipping cream
  • 2 packets vanilla sugar

 

Mango salsa:

  • 1 small mango
  • 2 – 3 mint stems + mint for garnish
  • Pinch of coarsely ground chilli

Preparation:

  1. Grate chocolate. Place nut nougat and Baileys into a saucepan, heat gently and slowly melt the nut nougat, stirring constantly. Place mixture in a sauce pan and leave to cool. Whip cream until stiff, slowly adding the vanilla sugar. Stir whipping cream and chocolate pieces into the nut nougat mass. Scoop the cream into a mould (e.g. a square cake tin, 20cm long, 9cm wide and 7cm high). Freeze overnight.
  2. Peel mango  and remove flesh from the stone. Cut the flesh into small squares. Scald the mint, then dry it with a paper towel and remove the leaves from the  stem. Finely chop the mint leaves and pour over the mango pieces together with the chilli.
  3. Dip the tin briefly into hot water. Turn out the parfait, cut into slices and serve with the mango salsa, garnished with the mint leaves.

Preparation time about 25 minutes + freezing time
