Peanut Butter Fudge
Got five minutes? With just 5 ingredients this fudge is a must-make for any peanut butter lover. And with clean ingredients like coconut oil and manuka honey, it's even - dare we say it - a little bit healthy...!
Ingredients
- 1 cup Mother Earth NZ Smooth peanut butter
- ¼ cup coconut oil melted
- 2 tbsp manuka honey runny, or melt if slightly hard
- ¼ tsp rock salt or Himalayan salt
- ½ tsp vanilla
Instructions
- Combine all the ingredients in a mixing bowl. Pour mixture into a lightly greased 20 x 27cm slice tin or cake pan. Cover and freeze until set, approximately one hour. Cut into 24 x 3cm squares and store in an airtight container in the freezer.
Notes
NOTE: This fudge should be kept in the freezer until ready to eat, as it will soften up quickly.
Tip:
Use an optional quarter cup of caster sugar if you plan to take the fudge out of the freezer for more than five minutes before eating. This will help to bind the fudge and prevent it from softening up too quickly. Sugar is used only if you plan to take it out of the freezer for an extended period of time.
