Prosperity salad

A Chinese New Year festive dish recipe. The salad starts off as separate components on a big platter, then people toss together for luck and prosperity. Whether you do it traditionally or not, you’ll enjoy the delicious combination of colours, flavours and texture.

Ingredients
 
 

  • ½ pack Trident vermicelli rice noodles
  • 1 cucumber julienned
  • 1 small carrot julienned
  • ½ red capsicum sliced in thin strips
  • 2 cups iceberg lettuce finely shredded
  • 3 radishes thinly sliced
  • 3 spring onions thinly sliced
  • 1 pomelo or grapefruit segmented
  • cup pickled ginger drained
  • 8 wonton wrappers cut into 1cm strips
  • Cooking oil for shallow frying the wonton wrappers
  • 250 g fresh salmon-sashimi

  • Heat about 5mm deep cooking oil in a small skillet. When the oil is hot, fry strips of wonton wrappers in small batches. Keep a close eye as they cook very quickly and can easily burn. Turn as they start to brown to cook the other side, then drain on a paper towel. Repeat with all the strips of wonton.
  • Prepare the Trident vermicelli rice noodles as per the packet instructions.
  • Plum dressing: Mix all ingredients for the dressing in a small jar.
  • Place the Trident vermicelli rice noodles in the middle of a large serving platter. Arrange salad components around the noodles and top the salmon sashimi on the noodles.
  • Gather everyone around the salad, then pour the plum dressing all over. Toss the salad together - the higher, the more luck for the new year!
