Quick and easy Tabbouleh
A quick and easy take on a classic salad, this tabbouleh-inspired couscous salad is the perfect dish to bring to any party.
Ingredients
- 1 box Diamond couscous Moroccan
- 1.5 cups Superb Herb Italian parsley chopped
- 2 tomatoes
- 2 spring onions
- ¼ cup Superb Herb mint chopped
- 50 ml oil
- 1 lemon juiced
- Salt & pepper
Instructions
- Prepare the couscous in accordance with the instructions on the packet. Set the couscous aside to cool down.
- Finely chop the parsley and the mint and slice the onions. Cut the tomato into quarters, scoop the seeds out and chop into small cubes.
- In a small bowl mix together the olive oil and lemon juice.
- Add the parsley, mint, chopped onion and tomatoes into the couscous. Pour olive oil and lemon juice mixture over the couscous and mix well. Season to taste.
