Ratatouille

Ratatouille is a delicious French vegetable stew which is very simple to make. Vegetables are sautéed in olive oil and left to cook with their own juices. Serve with crusty bread or on a bed of spaghetti with parmesan cheese. This dish improves with age and tastes better a day or two later.

Serves: 4

Ingredients

2  tablespoons  extra virgin olive oil
1 onion, chopped
2 Cloves garlic, crushed
½  Red pepper, deseeded and diced
½ Green pepper, deseeded and diced
1/2 Orange or yellow pepper, deseeded and diced
1 aubergine, diced
2  courgettes, diced
1 400g can chopped tomatoes in juice
1 tsp dried oregano
Salt and freshly ground pepper

Method

  1. Heat olive oil in a large sauce pan and sauté  the onion and garlic for about 3 mins.
  2. Add the peppers, aubergine and courgette and sauté stirring continuously for about 5 minutes.
  3. Add the whole can of tomatoes, oregano, and seasoning.
  4. Cover and simmer for about 10 minutes.

Fresh Tip: Add a can of chickpeas (drained) and Ras El Hanout to make this into Moroccan style. For more Mediterranean feel, add some capers and a handful of pitted black olives.
