Salmon and Potato Croquettes
This easy, quick salmon potato recipe is a winner. The addition of salmon is excellent for health and the brainpower of Omega 3s.
Ingredients
- 440 g tinned pink salmon
- 1 Onion grated
- 3 Gro Pak large potatoes
- 1 egg beaten
- 2 tbsp Alfa One rice bran oil dressing mayonnaise
- 1 tsp mustard
- 210 g Crackers preferably cheese flavour, crushed to tiny crumbs
- rice bran oil for cooking
- ¼ cup spring onions chopped
Instructions
- Drain and flake salmon; cook and mash potatoes. Combine all ingredients except crumbs.
- Season to taste, and form mixture into croquettes; roll in biscuit crumbs to form coating.
- Cook in frypan over medium heat until golden brown; drain carefully and serve with salad and sprinkles of fresh herbs.
