Simply the best Tiramisu

An Italian friend gave me this recipe. This dessert repeatedly appears at my dinner parties and is always a big hit. The secret ingredient in this Tiramisu is ‘time’. You MUST make it the night before to allow sponge and cream to amalgamate.

Ingredients
 
 

  • 1 tub mascarpone cheese 250g
  • 70 g sugar
  • 2 egg yolks
  • 1 cup strong coffee
  • 20 sponge fingers
  • Cocoa powder or shaved chocolate to serve

Instructions
 

  • Whisk egg yolks and sugar until pale. Add mascarpone. Mix well.
  • Make strong coffee.  Dip top and bottom sides of sponge fingers in the coffee quickly so only the surface of sponge changed colour (coffee on  a plate will help preventing accidentally dropping the fingers into large amount of liquid and make them soggy).  Arrange them in a layer on a serving dish.
  • Cover with half of the cheese mixture, then arrange another layer of sponge fingers.
  • Top with rest of the mixture. Cover the dish with cling film and chill in refrigerator overnight.
  • Serve dusted with cocoa or topped with chocolate shavings
