Soba noodle platter with ginger soy dressing

A platter of soba noodles, boiled eggs, avocado, radish and cold meat with small bowls of condiments and sauce.

  • Prepare soba noodles according to the packet instructions. Rinse well in cold water and set aside.
  • Meanwhile, boil eggs in boiling water for 8 minutes. When the time is up, place the eggs immediately in the iced water to cool. Peel them and cut them in halves.
  • Prepare salad vegetables. Sprinkle lemon juice on avocado.
  • Mix ingredients of the ginger soy dressing.
