Ingredients
 
 

  • 2 cups self raising flour
  • 1 tbsp butter or low fat spread
  • 1 cup buttermilk
  • 1 cups baby spinach chopped
  • ½ cup feta diced

Instructions
 

  • Pre-heat oven to 220°C, grease a biscuit tray or pan.
  • Put flour into bowl and rub in the butter/spread using your fingertips.
  • Add spinach and feta and stir in buttermilk until just combined.
  • Lightly knead the dough on a floured board until smooth.
  • Divide the dough into approximately 9 balls. Place the balls on the greased tray just touching each other.
  • Bake for 15 minutes or until scones sound hollow when tapped on the base.
  • Serve hot with some butter.
