Stuffed Mushrooms

Stuffed mushrooms make a hearty and healthy meal that even the kids could help with to keep busy over the holidays. For those who aren't the biggest fan of mushrooms - stuffing is the way to go.

Ingredients
 
 

  • 20 medium flat mushrooms stems removed
  • 4 slices grain bread
  • 50 g blue cheese
  • 50 g grated parmesan
  • 100 g brie or camembert
  • hand full of basil leaves
  • 2 cloves garlic
  • 1 red onion

Instructions
 

  • Put everything (except for the mushrooms) into a blender and blend until the mixture is just combined.
  • Top the mushrooms with the mixture.
  • Bake at 180°C for 10-15 minutes. Then grill for 5 mins or until the tops are golden brown.
