Summer rolls with beef and fresh veggies

Vietnamese style rice paper rolls filled with steak, rice noodles and fresh vegetables. Perfect for appetisers or a light lunch. Not too spicy for kids.

  • Cook the steak to your liking. Set aside to cool, then slice into strips.
  • Prepare noodles according to the packet instructions. Set aside to cool while preparing the vegetables.
  • To assemble: Submerge a rice paper into a large enough shallow bowl of water for 2 seconds. Lay flat on a damp wooden board. Place vegetables, steak and a small amount of the noodles in the middle, leaving about 5cm uncovered on each side. Fold in the uncovered sides of the wrapper, then tightly roll to enclose the filling. Repeat with remaining wrappers.
  • Slice each summer roll in half, and serve with your favourite dipping sauce.
