Tropical Pineapple Ginger Smoothie

Healthy Food Writer Niki Bezzant’s smoothie recipe. This is naturally sweet with calcium and fibre and perfect for an afternoon snack or breakfast on the run.

You will need:

1 cup Dole pineapple pieces
2 Dole bobby bananas
2cm piece of ginger, chopped (or use 2/4 tsp minced ginger)
1/3 cup natural yoghurt
1/2 cup unsweetened coconut milk
Dash of vanilla extract
Pinch of salt

Method:

Combine all the ingredients in a blender and blend until smooth and creamy. Garnish with pineapple, mint leaves and coconut threads.
Tips:
– For a thicker, more slushy style version, freeze the pineapple and banana before adding to the smoothie.
– For a green vege boost, add a handful of spinach or kale
– For a lighter smoothie, use coconut water instead of coconut milk.
