Whole cauliflower cheese & almonds

Ingredients
 
 

  • 1 large head cauliflower leaves removed

Cheese sauce

  • 40 g butter
  • 40 g plain flour
  • ½ tsp smoked paprika
  • 550 ml whole milk
  • 2 tsp mustard
  • 180 g cheddar cheese grated
  • parsley

Almond crumb

Instructions
 

  • Almond crumb: Combine the breadcrumbs, lemon zest, almonds and parsley in a bowl. Add olive oil and mix through. Season with salt and pepper.
  • Bring a large pot of salted water to the boil. Place the cauliflower in the water and boil for 15 minutes. Drain and set aside.
  • Cheese sauce: melt the butter in a medium pot, stir in the flour, and add the paprika. Cook out for 2 minutes, stirring constantly. Remove from the heat and gradually add the milk, whisking continuously. Add the mustard and cheese and whisk until the cheese has melted.
  • Preheat the oven to 160°C.
  • Place the cooked cauliflower in a baking dish. Pour over the cheese sauce. Bake for 20 minutes. Remove from the oven and sprinkle the almond crumb all over, then return to bake for a further 15-20 minutes.
  • Serve garnished fresh parsley.
