Ingredients
1tspdried yeast
1tspsugar
300mlwarm water40–40°C, not too hot
425gwholemeal flour
Seeds of your choice to top off the loaf
Instructions
Mix together yeast and sugar and stir into a cup with a little warm water. Yeast is ready when it goes a little frothy on top.
Place half the flour in a large bowl, make a well in the centre and add yeast mixture and remaining warm water.
Combine with a fork, adding remaining flour. Once the dough is drier work with your hands until it is soft, pliant and not sticky.
Turn dough into floured board and knead for five minutes.
Oil the loaf tin well and gently press dough into tin.
Gently shape the dough to fit the loaf tin being used for baking.
Sprinkle top with flour or your choice of seeds (sesame seeds, sun flower seeds and pumpkin seeds work well).
Cover with a clean cloth and place in a warm spot until dough doubles in size. This will take 1 -1.5 hour. Note: that is is extremely important that you keep the dough warm for optimum yeast activity.
Bake in a 200°C oven for 30-40 minutes or until the loaf sounds hollow when tapped.
Turn out loaf onto a wire rack and cool.
