Want to be a fun-guy and make creamy mushrooms? This is the perfect recipe for brunch or lunch on a slow and happy weekend.

peeled and chopped

Olivado avocado oil
Salt and pepper

lemon
juice only

portobello mushrooms

sour cream
Superb Herb thyme
to garnish
Instructions
Finely chop the onion. Lightly sauté the onion with oil in a large frying pan.
If necessary peel and trim mushrooms then slice finely.
Add mushrooms to the onion and sprinkle with seasonings and lemon juice. Cover the mushrooms and cook gently about 6 minutes.
Lightly stir in sour cream. Adjust seasoning to taste. Cook the mushrooms for 2 minutes more.
Serve garnished with sprigs of fresh thyme.
