Gingernut log
This is a tasty dessert using the good old kiwi biscuit the Gingernut. People will be pleasantly surprised by this sweet treat and will almost always ask "May I please have the recipe?"

Chilling time 6 hours hrs
- 300 ml thickened cream
- 2 tbsp icing sugar
- 1 tsp vanilla extract
- 250 g ginger nut biscuits
- ½ cup sweet sherry
- 50 g dark chocolate shaved, to decorate
Beat together the cream, sugar and vanilla until it is well combined and thick.
Spoon a little cream down the centre of a serving plate to hold the biscuits in place when stacking them.
Dip 1 biscuit into sherry and then spread one side of it with a dollop of the cream mixture.
Stand upright on the plate.
Repeat these steps with the remaining biscuits, pressing them into a log form.
Spread the remaining cream all over the log so that it is completely covered.
Refrigerate for 6 hours.
Sprinkle with chocolate shavings to serve.
