Basically the best baked cheesecake

A very basic baked cheesecake recipe. I have tried many different cheesecake recipes and we enjoyed each one of them, but my family always ask for this simple one, without any other flavours added.

Ingredients
  

  • 250 g cream cheese 1 tub/box
  • 125 g sour cream 1 small tub
  • 70 g sugar
  • 3 eggs separated
  • Juice of ½ lemon

For biscuit base

  • 100 g plain biscuits
  • 50 g butter melted

Instructions
 

  • Take the refrigerated ingredients out of the fridge to come to room temperature. Line 21cm round cake tin with baking paper.
  • Pre-heat oven to 160°C.
  • Put biscuits in a plastic bag. Tap the bag with a rolling pin to crash the biscuits into fine crumbs. Place the biscuit crumbs in a bowl. Mix melted butter thoroughly.
  • Tip all the biscuit base mixture in the bottom of the cake tin. Press with back of a spoon to make the cheesecake base. Set aside.
  • Using a hand held mixer beat egg whites until it forms a peak first.
  • In another bowl, beat cream cheese with sugar until smooth then add sour cream, egg yolks and lemon juice. Beat for a minute to combine well.
  • Fold egg whites in the cheese mixture with rubber spatula. Mix thoroughly.
  • Pour cheese mixture on the prepared biscuit base in the tin and bake for 40-50 minutes until an inserted skewer comes out clean and top slightly browned.
  • Cool in the tin. Delicious served warm or chilled.

Notes

Beat the egg whites before using the beater for cheese as egg whites do not form up well if oil/grease is present.
