Pear muffins
This is a simple muffin recipe you can add almost any fruit or nut to. In my opinion, pears work best here as they are high in fibre and they are the pear-fect nutritional package! The use of rice bran oil means great heart health.

- 1 ½ cups plain flour
- ½ cup brown sugar packed
- 2 ¼ tsp baking powder
- 1 tsp vanilla essence
- ½ tsp ground ginger
- ½ tsp salt
- 2 small pears peeled and chopped finely
- 1 egg
- ½ cup yoghurt plain
- ½ cup Rice Bran Oil
Optional topping mixture
- 3 tbsp sliced almonds
- 3 tbsp packed brown sugar
Preheat oven to 190 °C.
Sift first six ingredients together into a large bowl and stir in the chopped pear.
Whisk together egg, yoghurt, vanilla and oil. Stir into dry ingredients until just combined. Do not over mix. Fill 12 greased muffin cups about 2/3 full.
Optional topping: Mix topping ingredients together, sprinkle mixture over each muffin. Bake for approximately 30 minutes, until lightly brown.
