Farrah's chicken quesadillas
Quesadillas are great for parties as well as every day meals. You can freeze the leftovers as they reheat quite well. The spicy chicken and cooked peppers are a succulent delight when mixed with the melted cheeses. Cut the quesadillas into wedges and serve with sour cream and salsa if you like.

Servings 4 people

Ingredients
 
 

  • 1 pack Farrah’s Burrito Tortillia's
  • 1 pack Farrah's Burrito Spice Mix
  • 500 g chicken breast
  • 1 can chilli beans 420g
  • 1 capsicum
  • 2 cups grated cheese
  • 120 g baby spinach leaves
  • Oil

Instructions
 

  • Cut the chicken into strips. Place in a bag or bowl and coat in Farrah’s Burrito Spice Mix.
  • Heat a little oil in a pan on a medium heat until hot and cook the chicken.
  • Place a tortilla on a board and layer with chilli beans, strips of chicken, diced capsicum, grated cheese and a few baby spinach leaves.
  • Place another tortilla on top and layer ingredients again. Place the third tortilla on top.
  • Toast the tortillas in either a sandwich press or fry pan, or bake in the oven until the tortillas are golden and crispy, and the cheese is melted.

Notes

You can also use a sandwich press to make quesadillas: 1 wrap with ingredients on the inside, folded over and toasted in a sandwich press is a tasty quick snack!
