Vegetarian burger patties
This recipe is perfect for the vegetarian in your family who stills wants a good, ol' burger but without the meat patty.

- 1 Onion chopped
- ½ cup peanut butter
- ¼ cup tomato puree or paste
- 1 egg beaten
- 1½ cups brown rice cooked, white rice also works
- ¾ cup fresh breadcrumbs
- ½ cup wholemeal or buckwheat flour
- 1 tbsp rice bran oil
- salt
Sauté the onion in a little oil, remove from pan and set put into a bowl.
To the onion, add the peanut butter blended in with the tomato purée.
Add the beaten egg, stir, the combine the rice and breadcrumbs.
Mould into rissoles or patties, coat lightly with wholemeal or buckwheat flour. Leave in fridge for a while before cooking thus they hold together better.
Fry slowly in rice bran oil both sides, season and serve as desired.
We love these in a grunty fresh multigrain bun with loads of green salad, fresh tomato slices, avocado and a dash of lemon mayo. Add mushrooms, red onion, sprouts, an egg and beetroot to your veggie burger for even more layers of goodness.
You can also cook these veggie burgers on the BBQ. Serve with a side of freshly steamed corn cobs. This veggie burger recipe is ideal for vegetarians and even great when cold.
