Ingredients
 
 

  • 500 g sausage meat
  • 1 sprig Superb Herb Mint chopped
  • ¼ cup red & green capsicum chopped
  • 1 onion finely chopped
  • 2 rashers of streaky bacon chopped
  • salt
  • pepper
  • 1 cup breadcrumbs

Instructions
 

  • Finely chop up the mint and a small amount of red and green capsicum.
  • Cook bacon and onion together in a saucepan. Let cool.
  • Mix sausage meat with the cooked bacon & onion mixture and the capsicum & mint. Season with salt and pepper.
  • Mush and roll together with hands until all ingredients are well mixed. Shape mixture into patties then coat in breadcrumbs before frying.
