Blueberry French toast
A delicious recipe for fabulous, fruity French toast, baked with blueberries and served with maple syrup. Yum!

- 10 slices bread
- 6 large eggs
- 1 cup raw sugar
- 1 tsp ground cinnamon
- 1 tsp vanilla essence
- ¾ cup fresh, frozen or dried blueberries
- 1 cup milk
- ¼ cup brown sugar
- 2 tbsp butter melted
- Maple syrup and icing sugar to serve
Grease lightly a baking dish (Size: 22 x 33 cm) and arrange 5 of the bread slices in it. Sprinkle blueberries over the slices, then place the remaining 5 bread slices atop.
Combine eggs, sugar, one teaspoon cinnamon, vanilla and milk in a large bowl. Whisk to blend well.
Pour the egg mixture evenly over the bread slices. Cover and refrigerate overnight, or least a few hours.
Pre-heat your oven to 160 °C.
Uncover the baking dish. Dust each slice of bread with a few teaspoons of brown sugar and the extra half teaspoon of cinnamon. Drizzle with the melted butter. Bake without lid or cover for 50 minutes or until golden and set.
Using a sharp knife cut around each slice of bread. Slice and lift out with a spatula, then serve with a drizzle maple syrup, a dusting of icing sugar and fresh berries if you have them.
Blueberries are chock full of antoixidants. They're a summer fruit but dried blueberries are just as good in this fruity french toast recipe.
