Walnut Pumpkin Seed Brittle
This moreish brittle is perfect for adding extra crunch and flavour to salads - or just for nibbling on with your favourite drink!

Preheat the oven to 140°C and line an ovenproof tray with baking paper.
Combine the maple syrup and olive oil in a mixing bowl and stir in the salt and pepper.
Tip the walnuts and pumpkin seeds into the mixture and stir well to coat them.
Spread the nut mixture over the lined tray and bake on the lowest rack of the oven for 15 minutes.
Rotate the tray to ensure everything is cooking evenly and bake for another 15-20 minutes.
Remove from the oven and cool completely, then break into bite-sized pieces. Store in an airtight container.
