Walnut Pumpkin Seed Brittle

  • Preheat the oven to 140°C and line an ovenproof tray with baking paper.
  • Combine the maple syrup and olive oil in a mixing bowl and stir in the salt and pepper.
  • Tip the walnuts and pumpkin seeds into the mixture and stir well to coat them.
  • Spread the nut mixture over the lined tray and bake on the lowest rack of the oven for 15 minutes.
  • Rotate the tray to ensure everything is cooking evenly and bake for another 15-20 minutes.
  • Remove from the oven and cool completely, then break into bite-sized pieces. Store in an airtight container.
