Traditional spinach and feta scones

self raising flour

tbsp
butter or low fat spread

cup
buttermilk
1
cups
baby spinach
chopped
½
cup
feta
diced
Instructions
Pre-heat oven to 220°C, grease a biscuit tray or pan.
Put flour into bowl and rub in the butter/spread using your fingertips.
Add spinach and feta and stir in buttermilk until just combined.
Lightly knead the dough on a floured board until smooth.
Divide the dough into approximately 9 balls. Place the balls on the greased tray just touching each other.
Bake for 15 minutes or until scones sound hollow when tapped on the base.
Serve hot with some butter.
